Ultimate Loaded Baked Potato Soup Recipe

Serves 6-8 in 35 minutes!


Ingredients:

  • 2 pounds red or yellow potatoes (Don't use Russet unless you don't mind them falling apart completely)

  • 8 slices bacon

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1/4 cup flour

  • 4 cups chicken broth

  • 2 cups half & half

  • 1/2 cup sour cream

  • 2 ounces cream cheese

  • 1/2 teaspoon pepper

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon oregano

  • 1/4 teaspoon thyme

  • 1/4 teaspoon smoked paprika

  • 8 ounces extra sharp cheddar

  • 8 ounces white cheddar

  • 4 green onions, chopped

  • Sour cream, for garnish

  • 4 tablespoons shredded cheese, for garnish

  • 2 green onions, chopped, for garnish

Directions:

  1. Chop bacon into large pieces and render on low heat in your soup pot, remove and place on paper towel lined plate.

  2. Cut potatoes into cubes and boil for 10-15 minutes until soft enough to pierce with a fork but not crumbling completely, you want some of them to keep their shape a bit in the soup.

  3. Drain potatoes and allow them to sit in the pot and let the steam and water evaporate while you prepare the rest of the recipe.

  4. Sauté onions on low in the bacon fat for 5 minutes until translucent.

  5. Add garlic, spices and herbs, and flour. Stir for just one minute to toast the seasoning and cook out the flour for a quick roux.

  6. Add chicken broth and half and half, bring to a low simmer.

  7. Add potatoes, sour cream, and cream cheese; once the cream cheese is melted, add the shredded cheddar

  8. Add 3/4 of the rendered bacon pieces and green onions.

  9. Stir until all is well combined, garnish with more shredded cheese, sour cream, bacon, and green onions!
