The Chicken: There are so many options to keep this meal quick! If you meal prep and pre-cook chicken, use it for this! If you want to pick up a rotisserie chicken, that works too! I had some bone-in chicken breasts so I roasted them because if I'm eating chicken breast that's how I'm cooking it.


To roast the chicken breast the way I did in my video: let the chicken sit on the counter for at least half an hour, up to an hour. Super cold chicken seizes up when you cook it on high heat and comes out tough. Cook on medium high, skin side down, with lots of salt and pepper, in a cast iron or oven safe pan until the skin is a light golden brown. Don't let the skin get too brown or it will burn in the over. Flip the chicken, and place in a 425F oven for 20-25 minutes until it temps at 160F. Let it rest on a cutting board for at least 10 minutes before you slice it. The skin will be CRUNCHY and the meat will be juicy and tender, every time. It's foolproof!


Quick & Easy Chicken Tortellini Soup Recipe

Serves 4-6 in under 30 minutes (if using pre-cooked chicken)


Ingredients:

  • 2 cups chicken meat, shredded

  • 2 tablespoons olive oil

  • 9 oz pre-made cheese tortellini

  • 1 onion, finely chopped

  • 2 carrots, diced

  • 2 celery stalks, chopped

  • 4 cloves garlic, minced

  • 8 cups chicken broth

  • 2 bay leaves

  • 1 teaspoon dried thyme

  • 1/2 teaspoon dried oregano

  • Salt and pepper, to taste

  • Fresh or dried parsley, for garnish

Directions:

  1. Start by sautéing the onion, carrots, celery, and garlic in butter or olive oil in a large pot until they become soft, about 5 minutes.

  2. Add the chicken and dried herbs, giving it a quick sauté with the veggies, 2 minutes.

  3. Pour in the chicken broth and add the pre-made cheese tortellini, cook according to package directions on the tortellini.

  4. Taste for seasoning and discard the bay leaves before serving.

  5. Ladle your Quick & Easy Chicken Tortellini Soup into bowls, garnishing each serving with a sprinkle of parsley.
