Quick & Easy Chicken Tortellini Soup is the perfect solution for those days when you need a wholesome, comforting meal without the hassle. With pre-cooked chicken and pre-made tortellini, you're cutting down on prep time while still enjoying a hearty, satisfying soup.

The combination of tender chicken, cheesy tortellini, and aromatic vegetables in a flavorful broth makes this dish a delightful go-to option for busy weeknights or whenever you crave a quick, delicious homemade meal. So, when time is of the essence but you refuse to compromise on flavor, turn to this recipe for a bowl of pure culinary magic. It's a reminder that a satisfying meal doesn't have to be complicated.

The Chicken: There are so many options to keep this meal quick! If you meal prep and pre-cook chicken, use it for this! If you want to pick up a rotisserie chicken, that works too! I had some bone-in chicken breasts so I roasted them because if I'm eating chicken breast that's how I'm cooking it.

To roast the chicken breast the way I did in my video: let the chicken sit on the counter for at least half an hour, up to an hour. Super cold chicken seizes up when you cook it on high heat and comes out tough. Cook on medium high, skin side down, with lots of salt and pepper, in a cast iron or oven safe pan until the skin is a light golden brown. Don't let the skin get too brown or it will burn in the over. Flip the chicken, and place in a 425F oven for 20-25 minutes until it temps at 160F. Let it rest on a cutting board for at least 10 minutes before you slice it. The skin will be CRUNCHY and the meat will be juicy and tender, every time. It's foolproof!
