Lemony Chicken Noodle Soup Recipe

Serves 4-6 in 30 minutes!


  • 2 boneless, skinless chicken breasts, diced (about 2 cups of chicken)

  • 8 cups chicken bone broth or stock

  • 4 small or 2 large carrots, washed and sliced

  • 4 celery stalks, sliced

  • 1 large onion, chopped

  • 4 cloves of garlic, minced

  • 2 cups egg noodles

  • 3 sprigs fresh parsley, chopped

  • 3 sprigs fresh thyme, chopped

  • 2 sprigs fresh oregano, chopped

  • 2 bay leaves

  • Salt and pepper, to taste

  • 1 lemon, juiced

  • 1-2 teaspoons honey


  1. Poach the Chicken: Begin by poaching the chicken breasts in chicken broth. Simmer them until fully cooked, which should take about 15-20 minutes. Once done, remove the chicken and dice it into bite-sized pieces. You can also bake the chicken breasts, totally up to you. A rotisserie chicken works for this as well. Just be cautious with adding salt to the soup since rotisserie chickens already have so much salt added!

  2. Time Saver: I use the chicken I prep every week so I can skip this step. I put a whole chicken in my slow cooker on high for 4 hours, when it temps at 165F I take it out, pick the meat off, and separate the breasts and dark meat for recipes.

  3. Sauté the Aromatics: In your soup pot, heat up the butter and sauté the onion, celery, and carrots for 3-4 minutes. Add the garlic and herbs, stir for one minute.

  4. Add Broth and Noodles: Pour the chicken broth, along with the diced chicken, into the pot with the sautéed aromatics. Bring the mixture to a gentle simmer and add the egg noodles. Let it cook until the noodles are tender, about 8-10 minutes.

  5. Zest and Zing: Stir in half the lemon juice for a refreshing citrus kick. The lemon adds brightness and a zesty twist to the soup. Taste and if you want more tang, add the rest!

  6. A Touch of Sweetness: Finally, drizzle in the honey, giving the soup a subtle, natural sweetness that balances the tartness of the lemon. Taste and adjust, I use more or less, depends on how salty my soup is and how zesty my lemon is!
