Jambalaya Stuffed Peppers

We have so many bell peppers to eat right now so I thought I'd make some stuffed peppers but I wasn't feeling ground beef nor tomatoes. Sick of tomatoes right now to TBH. I decided to fill these peppers with my mom's chicken and sausage jambalaya and it was DELICIOUS!

Recipe serves 6 in 45 minutes!


Ingredients:

- 1 1/2 pounds boneless, skinless chicken thighs, cut into 1" chunks

- 1 pound sausage, cut into half moons about 1/2" thick (I used smoked turkey sausage but Andouille sausage is traditional, use it if you can get it!)

- 2 tablespoons butter or olive oil

- 1 medium onion, diced

- 1 bell pepper, diced

- 2 cloves garlic, diced

- 4 bay leaves

- 1-2 tablespoons Cajun seasoning (season with your heart!)

- 1 cup long grain rice

- 2 cups chicken stock

- 6 bell peppers, tops and seeds removed

- 3 green onions, finely sliced for garnish


Directions:

  1. Preheat oven to 375F and prepare the bell peppers you're going to stuff; cut the tops off and gently remove the insides of the peppers

  2. Place peppers in shallow dish and pre-bake for about 15 minutes to soften them

  3. Start your jambalaya; sauté diced onion and bell pepper in large pot until softened, add garlic and spices, stir 30 seconds

  4. Add rice and chicken stock, stir, bring to a boil, reduce to low and cover

  5. After about 20 minutes check doneness of the rice and if it's cooked take jambalaya off the heat

  6. Carefully spoon jambalaya into bell peppers and bake for 15 minutes or until the tops get a bit browned, you want that rice on top to get a little crunchy!

  7. Plate stuffed peppers and garnish with sliced green onions

This recipe is so easy and quick, you can feed a crowd for cheap, and don't nobody not like jambalaya! This jambalaya is a classic Cajun recipe that I make probably once a month; since it's just my husband and myself this stretches for 2-3 meals depending on how large our portions are. Skip stuffing the pepper if you're just in the mood for jambalaya on it's own, you wont be disappointed.
