Green Chicken Chili

You know those recipes you make over and over again but you've never written down? This soup is one of those recipes for me!

I finally bought a recipe journal a few months ago so I could write down my recipes at my husband's request. I'm trying to focus on writing things down as I cook and make up recipes so we can recreate the meals we really love. I took my time today and wrote down every ingredient I used, how much, and made sure it was just right, all for you lovely, soup-loving people!

Green Chicken Chili is a vibrant, delicious, and surprisingly healthy soup. Packed with flavor and nutrients, this soup has won hearts and palates for good reason; it's a perfect balance between health and indulgence.

The best thing about green chicken chili is the fresh, wholesome ingredients. Bell peppers, garlic, onions, and white beans provide a wealth of vitamins, minerals, and dietary fiber. These ingredients not only make the chili delicious but also offer essential nutrients that support your overall health.

If you can't access Hatch chiles, canned green chiles are the only real substitute and are what is traditionally used anyway.

Bone broth is also a key ingredient in this recipe. This nutrient-rich broth is a treasure trove of amino acids, minerals, and collagen, which are known for their various health benefits. It's gentle on the digestive system, supports joint health, and promotes skin and hair vitality. Using bone broth enhances the flavor and boosts the nutritional profile of this soup.

Green Chicken Chili Recipe

Serves at least 8 in 40 minutes!


  • 1 tablespoon butter or oil

  • 2 bell peppers, diced

  • 4 jalapeños, diced

  • 4 poblanos, diced

  • 1 large onion, diced

  • 4 cloves garlic, minced

  • 1/4 teaspoon fresh oregano or 1/2 teaspoon dried oregano

  • 1 teaspoon coriander

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin (if you like cumin, use more, it's not my favorite)

  • 1/2 teaspoon smoked paprika

  • Salt & Pepper, to taste

  • 8 Hatch chiles, roasted and chopped (4 - 4.5 oz cans chopped green chiles)

  • 2 cups corn (fresh, frozen, or canned)

  • 2 tablespoons lime juice

  • 8 cups chicken bone broth

  • 2 pounds chicken, large dice

  • 4 cups white beans, drained and rinsed

  • 1/2 cup masa

  • Sour cream, for garnish

  • Cilantro, for garnish

  • Lime, for garnish

  • White cheddar, for garnish

  • Avocado, for garnish


  1. Sweat onion, bell pepper, poblano, and jalapeños in oil on medium low heat in an 8 quart soup pot.

  2. Add garlic and dry spices, toast for one minute.

  3. Add green chiles, bone broth, lime juice, corn, and chicken, bring to a boil and then lower to simmer, cover and simmer 15 minutes.

  4. Temper masa with 2/3 cup of hot broth and whisk, add masa and beans to the soup pot and simmer 15-20 minutes.

  5. Taste for seasoning and it's all done!

Ladle up this homemade green chicken chili and garnish it with sour cream, shredded cheese, fresh cilantro, avocado, and a squeeze of lime for a complete, healthy, filling meal.
