I've always liked a bit of Cowboy Butter on a good steak but I've found it to be a bit more sour or bitter than I really prefer. When my husband and I decided to grill up a 3 lb bone-in ribeye during Labor Day weekend this year I decided to change up a few things and see how it went.
It went well. The orange and honey in the recipe stand up very well against the spices and give the butter the citrus you're looking for a in a Cowboy Butter but without the bite. A kinder, gentler butter. Cowgirl Butter.
Cowgirl Butter
Ingredients:
1 stick of butter, room temp
1 Tbsp minced chives
1 Tbsp minced cilantro
1 Tbsp minced parsley
1 tsp minced thyme
1 tsp spicy mustard
1 tsp honey
Zest of one small orange
Juice of half small orange
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1/2 tsp red pepper flakes
1/2 tsp rubbed sage
Salt & Pepper
Directions:
Mix all ingredients in a large bowl with a spoon or hand mixer, chill in the fridge for at least an hour, longer is even better
When your steak is just off the grill or pan and starting to rest, allow a scoop of the butter to melt into it
We also used this butter as a base on a BBQ pizza spin-off you can find here! I swear this sauce is good on anything! The next time I make it I'll make more and brush it on dinner rolls and corn too!
