My twist on this classic Irish dish is the perfect party snack or late night treat for your St. Patrick's Day weekend celebrations!

I decided to turn colcannon into a small twice baked potato because we LOVE miniature versions of things in this house and will use any excuse to add extra bacon and cheese to our food. I hope you give this twist on an Irish classic a try this St. Patrick's Day weekend!
