Colcannon Twice Baked Potatoes

My twist on this classic Irish dish is the perfect party snack or late night treat for your St. Patrick's Day weekend celebrations!

Colcannon, a traditional Irish dish, is the epitome of St. Patrick's Day comfort food. Made with mashed potatoes, tender cabbage or kale, creamy butter, and sometimes scallions or leeks, it's a hearty and soul-warming dish that celebrates the flavors of Ireland.

Whether enjoyed as a side dish or a meal on its own, colcannon embodies the spirit of Irish hospitality and the joy of sharing a delicious meal with loved ones.

I decided to turn colcannon into a small twice baked potato because we LOVE miniature versions of things in this house and will use any excuse to add extra bacon and cheese to our food. I hope you give this twist on an Irish classic a try this St. Patrick's Day weekend!
