Buffalo Chicken Jalapeño Poppers

My quick and easy buffalo chicken dip stuffed jalapeños with bacon breadcrumbs are what you need for game day!

You want to eat buffalo chicken dip but also keep one hand free for your beer? You want to bring the heat on game day? You like to add bacon to anything and everything you possibly can? I got you. This recipe is for no muss, no fuss, single-handed buffalo dip snacking.

I used organic, canned chicken breast because who wants to spend all that time cooking chicken for dip? No one will notice. Trust me.


I grow my own jalapeños so they were a bit small, if you're using store bought they'll probably be a lot bigger and will hold more dip so I tried to adjust for that in the recipe!


Buffalo Chicken Jalapeño Poppers


Ingredients:

  • 32 small or 16 large jalapeños, halved and cored

  • 8 oz cream cheese, room temp

  • 1 cup + 1/2 cup shredded cheddar cheese

  • 1/2 cup Franks Red Hot sauce

  • 1/2 cup Ranch dressing

  • 2 (10 oz) cans chicken breast

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1 cup panko breadcrumbs

  • 4 slices of bacon, cooked crunchy (1/2 cup of bacon bits works too)

Directions:

  1. Preheat oven to 375F and prep your jalapeños by washing, slicing in half, and scooping out the seeds and pith

  2. Combine chicken, cream cheese, hot sauce, ranch, shredded cheese, and spices with a hand mixer in a large bowl

  3. Blitz breadcrumbs and cooked bacon in food processor

  4. Use the back of a spoon to level a scoop of buffalo dip into each half of the jalapeños, top with more cheddar, and finally the bacon breadcrumbs

  5. Bake for 15 minutes

  6. Serve with ranch dipping sauce if it floats your boat!

The jalapeños stay just a tiny bit crunchy, the dip and cheese melts perfectly, and the bacon breadcrumbs on top are just icing on the proverbial cake. You don't have to use two hands to eat this buffalo chicken dip AND you get the satisfaction of a jalapeño popper with a LOT less work, in my opinion. Leave out the breadcrumbs for a gluten free, keto option!


She's giving cheap and easy. She's giving bacon, crunchy, creamy, and spicy. She's giving jalapeño popper vibes. Make these and you have a winner on your hands... even if your team lets you down.
