If you like Panera Bread's broccoli cheese soup you're going to LOVE this recipe! It's probably not a dupe, I think it's better... you be the judge!

This soup is SO easy to make and super fast! It only takes 30 minutes from start to finish and has 10 ingredients versus Panera's 45 ingredients. That's just... too many ingredients.
Avoid the artificial flavorings, colors, stabilizers, preservatives, weird ultra-processed ingredients, save a little money, and make this at home! You'll probably like it more than theirs anyway.
The key to this recipe is the cheese. In my opinion, you HAVE to use extra sharp cheddar and grate it yourself. Not sharp, not mild, EXTRA sharp and never, ever pre-shedded cheese... for so many reasons.
The rest of the ingredients are flexible. If you don't have fresh broccoli, use frozen. If you don't have carrots, leave them out. You can shred the carrots yourself like I do or you can buy those bags of shredded carrots for salads in the produce section. If you don't have half and half, use whole milk, you can even use skim milk (but I wouldn't). There are so many options for recipe replacements and this soup will still turn out fabulous!
Broccoli Cheese Soup Dupe
Serves 2-4 depending on portions, double recipe for large batch!
Cook Time: 30 minutes
Ingredients:
2 1/2 cups broccoli florets
1/2 onion, diced
1 clove of garlic, diced
1 cup shredded carrots
4 tablespoons butter
1/4 cup AP flour
1 1/2 cups chicken broth
1 cup heavy cream
1 cup half and half
2 cups shredded extra sharp cheddar
Directions:
Sweat onion and carrots in butter 5 minutes until soft.
Add garlic and flour; stir 60-90 seconds.
Slowly add in chicken stock and whisk to avoid lumps.
Add heavy cream, half and half, and cheese; whisk.
Allow to simmer 10-15 minutes until cheese is completely melted and soup has gotten a bit thick.
That's it! It's so easy and incredibly delicious! Once you taste this you'll be glad you made it yourself and stayed home.
