Black Bean Soup Recipe

Ingredients:
2 cans black beans, drained and rinsed
2 tablespoons olive oil
1 onion, finely chopped
1 bell pepper, diced
3 cloves garlic, minced
2 teaspoons cumin
1 teaspoon coriander
1 teaspoon oregano
4 cups chicken or vegetable broth
1 can fire roasted, diced tomatoes
2 bay leaves
Salt and pepper, to taste
Fresh cilantro, for garnish
Sliced avocado, for garnish
Sour cream, for garnish
Lime slices, for garnish
Finely diced red onion, for garnish
The Culinary Journey:
Start by sautéing the onion and bell pepper in olive oil in a large pot over medium low heat until they get soft, about 5 minutes.
Add the garlic and dry spices, stirring constantly and toasting them for just one minute.
Add the bay leaves, black beans, diced tomatoes, and stock, bring to a boil and then lower heat to as low as your lowest burner can go; simmer at least 30 minutes.
