Black Bean Soup Recipe

Serves 6 in 45 minutes!


Ingredients:

  • 2 cans black beans, drained and rinsed

  • 2 tablespoons olive oil

  • 1 onion, finely chopped

  • 1 bell pepper, diced

  • 3 cloves garlic, minced

  • 2 teaspoons cumin

  • 1 teaspoon coriander

  • 1 teaspoon oregano

  • 4 cups chicken or vegetable broth

  • 1 can fire roasted, diced tomatoes

  • 2 bay leaves

  • Salt and pepper, to taste

  • Fresh cilantro, for garnish

  • Sliced avocado, for garnish

  • Sour cream, for garnish

  • Lime slices, for garnish

  • Finely diced red onion, for garnish

The Culinary Journey:

  1. Start by sautéing the onion and bell pepper in olive oil in a large pot over medium low heat until they get soft, about 5 minutes.

  2. Add the garlic and dry spices, stirring constantly and toasting them for just one minute.

  3. Add the bay leaves, black beans, diced tomatoes, and stock, bring to a boil and then lower heat to as low as your lowest burner can go; simmer at least 30 minutes.

  4. Once the soup has simmered and the beans have broken down a bit and created a thick soup, season with salt and pepper to your taste.

  5. Ladle your Black Bean Soup into bowls, garnishing each serving with a sprinkle of fresh cilantro, sour cream, avocado, diced onions, and a generous squeeze of lime juice.
